Small food brands often struggle to make the jump from self-production to co-manufacturing. Minimum order quantities and documentation requirements often stop a conversation before it even starts. All the while, manufactures are struggling to fill excess capacity.
FoodOps President John Castillo speaks to the need for connection points for brands and producers in a March 2022 Star Tribune article summarizing this unfortunate situation.
This was based on a study done by the Agricultural Utilization Research Institute (AURI) published a study on February 24, 2022. FoodOps was consulted in the development of the report.
